Retiring players to Assistant Coaches

In LRB4 you could turn a player you retired into an Assistant Coach. Is it correct that this is not possible in LRB5?

Correct, you can't.

Long version now, to save anyone else typing it up. Assistant Coaches are more important in LRB5 than they ever were in LRB4. They have a larger effect on the Brilliant Coaching Roll than FAME and as of such there's no free ride in getting them anymore.
