If a player makes a pass, and there are multiple opponents with pass block, I read it that all of them get the move, but only one may try to intercept. is this correct?

Yes. each player is treated seperately.

If the pass-blocking player will place a tz on the passer,
If the pass-blocking player will place a tx on the target player,
or if the pass-blocking player can get into postion between the passer and the target square to attempt an intercept,
then use of the skill is allowed.

In fact. Any number of pass-blocking players may move between the passer and target as into position to intercept (instead of placing tackle zones on the thrower or catcher). Even though only 1 player in the end will get to make the single dice roll to attempt to intercept.
