Guard for a mobile Guard player or Sure Hands for a great (by orc standards) ball carrier.

Is there a reason I shouldn't go with Stand Firm? I could put him on the sideline and not worry about him being pushed out. If I have a tackle zone on a player with the ball deep in my zone they'll have to knock my guy down or dodge the ball carrier away.

Ag4? Make him a ball carrier with Sure Hands. You can use pro on dodges and go for its if necessary.

Stand Firm adds nothing to AG4 and he's still only ST3. Your reasoning works for the black orcs and the other blitzers too (although I'm sure you'd benefit more from Guard and MB first).
