Really depends very much on opponents how I set up, but generally I'll rely on my line boys being tough enough to survive getting knocked about a bit, while still making a pain of themselves and letting the rest of the team get to the POA.

Would be one possible variant.
As for attacking, I tend to try and break a wedge through up one of the lines, and letting it go from there. Too many variables for detailed plans.

Well..
I played a Dwarf v Human game on Sunday against a very powerful team (TR 250+) and set up with 5 on the LOS at all times. They were like rocks, he just couldn't get past them at all and I won 1-0 (blizzard helped a bit!)..
I still say 5 longbeards on the LOS or trouble will ensue....

It's funny, 'beardy' is a term used mostly about 40K or WFB players. Can I ask what you mean by 'beardy' in a Blood Bowl context?
The worst I ever saw was a Mummy with Jump Up and Piling On in the old 3rd Ed (thankfully no longer available!!) which I would have said was very beardy!!! How was the Orc team beardy??

beardie here means he foul every time with nasty players and so on.
Not a good play to watch at all.
Destroy for destroy is Beardie. The worst is that he destroy the team of a newbie player...and he would have surely won without that.

Sorry Longshot, I disagree.
Killing for the sake of it is BB (and a genuine Orc tactic, it's all my Snots know how to do!). I accept that killing all the players in a newbie team is for guys with size issues in the trouser department, but if the ref doesn't spot him, I say go for it..
You do use the IGMEOY rule don't you?

I took this combo once - and only once - as a revenge scenario. Several years ago, I had a Mummy who suffered MA-1 in a game against a rival Human side. He gained AG+1 in that game. I vowed not to retire him, but to build him into a super player who would come back to wreck the Humans.
I actually got JUp and POn for this player, but (sadly) the league ended before I could exact my revenge!

Norse we don't use IGMEOY rule, but i have advocated for it since a long time. We only use the red card like sent off. I mean a player sent off is not avaible for the next match. And in addition dirty player give in your league +2 on armor roll and +2 on injury roll.
We have to try to play 2k1!
