My Ghoul got in the Steroids.... Now What?!
It's the Ghoul of my Dreams and your Nightmares with a stat line of: 7437
Let's assume that this "massive" target is going to live to two more skills... what should they be?

If you had a double you could contemplate Break Tackle 
but I assume side-Step would be better.
Just let the strength to its work, I'd make this little guy the ball carrier, because most teams are designed to take down a ST3 ball carrier, not a ST4.
Block/Sure Hands to be boring but because that's going to be a lot of TD going his way and therefore SPP for even more skills.
Plus you can field him when kicking, to blitz the ball carrier and snatch the ball.
Tackle as a third option.

I agree with Greyhound: Block, S-Hands. It's very annoying facing a ST4 Blodge ball carrier, especially with MA7.

Not to mention that one of the players in the league is a huge fan of Dauntless & Strip Ball so Block & Sure Hands sound good to me for "normal" skills. For a doubles who knows ... maybe SF??? I don't know if I'd make him my "sole" [soul?] ball carrier. Spreading the love around at least a little is a good idea IMHO.

Is it an undead or necro team? I like to develop two of the undead ghouls into blitzers. This one? Block + Frenzy. For strip ball he still needs to get at the ball carrier, which is typically not a very nice place for an AV7 player, assuming your opponent defends his ball carrier. I'd rather use him to open up the defence and let one of your wights have a go at the ball carrier.

Any schmo with wrestle can make Strip Ball work so IMO it's always a waste on STR 4+ player. Besides that IMO it's always a bit daft to give your star player a skill which can be countered by 1 general acces skill which almost every team has or will take early.
A mobile str 4 player with frenzy is a downright terror!

This is ok, but only works vs dodgy teams, frenzy works vs every team. Again giving your best player specialist skills that cannot be used vs every team (like strip ball) is always something you need to think about. If I had a +Str on a ghoul in my undead team then I would keep progressing him as a strong ball runner

When he gets to 51SPPS I would consider DT, Fend or Sure Feet depending on play style

This [general] advice is obvious but it may simply be the best .... Look at which coaches are playing what teams. Determine who the biggest threats are. Once that's done then figure out what skill sets would make this player the most effective vs. your toughest matchups.'
In your league you've basically got 2 coaches you go against. One who loves stunties but also plays Lizardmen & Humans. There's plenty of Dodge & other things to go after here. The other [noob?] coach runs Slann, D Elves, and Amazons. If developed "properly" there's probably a lot of Dodge & mobility skills here too.
So in this Dodgy/Mobility league vs. coaches that usually aren't cut-throat I'd go for the best solution you can find. Tackle or DT eventually may work out nicely simply because your opponnents are less likely than normal to go after your star player and they will rely on being mobile.
