So our local league started last night (GRIBBL - Grimsby Blood Bowl League) and I managed to get 2 games in with my new team 'The Space Hoppers' a slann team. Anyhow Tied the first game versus Wood Elves - though Bret Bugeater one of my catchers died and I had to use all my winnings to replace him (with Brad Bugeater his brother). Second game had a stormer winning vs Humans 3-1 getting skill ups on a Line Frog (which got an AG boost so a no brainer) and both catchers and here is where my dilemma lies, do I go one with dodge, one with kick, both dodge/block, both kick off return? or some other combo I haven't considered?

Congrats on the +AG lino! I'd give that lino Wrestle, followed by Strip Ball or Tackle, next for a great cage breaker.
Getting Dodge and Block (in that order) is the best development path for Catchers on a slann team. It adds mobility and durability to the whole team. After that you can give one Sure Hands and the other Side Step.
Do not give them Kick off return as they're fast enough to retrieve the ball. Any benefits from the combo with Diving Catch are illusory. Also, if you really want Kick on the team, then a lino is better suited for it.

one catcher dodge, and one block. If you face a takle heavy enviroment the second one is the ball carrier, if not the first one. Next skill the other way arround.

You do want kick, and a lino is definitely the player to give it to. After that, +1 to everything Ullis said.
