the wood elf, and the skaven teams of the CBBL have players who can score in one turn. How could I stop them? did you have a similar problem in your leagues? If yes, what did you do?

Depends on the situation... Skaven and Wood Elf almost always save their one-turner for that 8th turn td... in that case you have two options (that I can think of) :

1) Try to blitz or push the one-turner away from the LOS to put him 14 squares from the end-zone... He can only move 13...
2) Cover the end-zone with tackle zones, so he would have to make numerous dodges to score... thats obviously no good against an AG5 leaping one-turner, but hey - what is?

Should the Wood Elf or Skaven coach bring on the one-turner every drive then I would try to nail them with:

1) Skills - Tackle, tentacles, shadowing, Prehensile Tail, diving tackle... anything that´ll hamper his movement... A Stand Firm Tentacled Rat Ogre would probably be a good option!
2) Freebot a wizard and turn him into a frog.... frogs make a cool squishy sound when blocked... and French people eat them... so I´m told... :-)
3) Throw a gobling or halfling into his face!!!!

Stopping a one turner is very difficult.

Most decent defenses will put a tackle zone on every square, but an offense can almost certainly open up a gap - and that is all that is needed.

You can try and play a deep D a 3-8: 3 guys on Line of Scrimmage (LOS) and 8 guys setting up a wall of tackle zones a couple spaces away from the end zone. That will generally give your opponent an easy two turn touchdown though.

You can try the spread 3-4-4: 3 guys on LOS 4 guys 2 spaces back, and the other four 2 or three spaces behind them. the non-LOS guys cover the hash line and stand two spaces from the sidelines. This generally forces the offense to move/knockdown one of your LOS guys, so if you are a power team it can work...but don't count on it.

Overall your best bet is to hope for a little luck - that you get a blitz, they use the one turner on defense, or he fails a go for it. In that case hit him with your most dangerous player (claw, mighty blow, etc) and foul the living daylights out of him.

On offense, try and control the flow of the game and score. If you do this right, he won't be able to score more TD then you and at worst you end up with a tie.

OTTD do kick ass. with just about four or 5 3+ rolls they can score. Best option is to play the maths. you score and give ball to rival. He goes for one turn but in a game with two or three attempts one will fail probably near your endzone. just keep sucking them and win by one when it happens.
problem realy is if they any good at defense you could be in trouble...
