Set up question

Hi. I am very new to BB and have been reading all that I can get my hands on. There are no local, active players that I know of here, but I would like to change that eventually. In the meantime, I would like to teach some of the people in my household how to play.
However, I am confused on one point. After reading material on offensive and defensive tactics and setups, I am under the impression that much of the gametime is spent manuevering pieces into formations that allow for moving toward the end zone and eventually scoring. This is offset somewhat by making sure players are in a position to prevent the opponent from scoring should a fumble or interception occur. Is this correct?
I just want to make sure that this is correct and that we don't reset the pieces on the line of scrimmage in order to conduct some of the tactics I have seen (like in real American Football) each time we advance the ball up the field.
