So what teams are good for a newbie player? I'm leaning toward a dwarf or norse team. Any suggestions?

Human because they have many personal/player rerolls and good general armor....
Orc because they have excellent positionals and high armor, i.e., very forgiving of mistakes/high survivability....
Feel free to experiment, though, and let me suggest my website for Necromancer teams:
Arkham Asylum Blood Bowl. Basic tactics and the Necro-Tacticum should give you a good taste for the most exciting and challenging of the Undead.... Should you like what you see, and don't mind applying yourself to a baptism in fire, then take on the Necromancer's mantle...!

I think this depends on what you want to learn.
If you want to learn the basics of bloodbowl : pass, foul, block, assists, loner, big guies etc.., humans is the best. You will be able to see all game phases. After playing humans for several games, you will be able to see what works on average and what does not, and then you will be able to compare. But don't expect easy wins.
Dark elves are also good, but lack the big guy and you will then not be able to see how usefull/less this kind of player can be.
If you begin to whin at the first blood, then orc or dwarfs are better. You will enjoy playing them since you will not loose a lot of players. But you will probably never understand how to dodge the right way.
If you want to score easylly, elfes (woodies or pro) are the best, you can set up 2 turn TD easilly. Whenever this is not the best way to win a game, it is satisfying to score at least 1 TD during each match. But you will probably not learn how to set up a chain blocking path, and you will probably not understand how the hell can other players destroy half your team in 3 turns.
my 2 cents
