IMO, we need rosters with good ideas behind them.
Not just "a roster for every race".
Then again - if there is a good working team concept - and it fits a particular human nation or other race, then I see no reason why we could not have a team.
To me, the most important thing is that quality takes priority over quantity.

I definately wouldn't want to see another human team that was "almost" like the normal one. I'd either have something unique/new or nothing at all.
As for Bretonnians, they definately shouldn't be charging onto the pitch with lances and warhorses. On the other hand, I wouldn't object to some heavy armor - just look at the chaos warriors.
IMO, "knight" is a cultural title, in much the same way that Slayer or (Tunnel) Runner. In this way it is very different from a swordsman or a halberdier.
The way I see it, if Bretonnians are playing Blood Bowl, then it would probably be the knights who were playing the game.
So I don't see a devastating conceptual problem,
as long as there is an interesting roster to back it up
