You have to start the team (i.e. before it's first game) with 11 rostered players (so stars and mercs don't count towards that total).

You have to start with 11. However there is nothing to stop you firing players after the first game and not taking journeymen to keep the numbers below 11.

Having learned the hard way, I would always take the Beast, in any BB format.
The ideal skills on the Beast are Break Tackle followed by Stand Firm. Break Tackle means "he" is always a mobile threat and cannot be marked out of the game by an opposing linemen (a standard tactic). Stand Firm means "he" cannot easily be pushed away. Both Break Tackle and Stand Firm thus drastically increase the potential power of the Tentacles.
The Beast is probably the best Big Guy in the game currently, and also probably the best value. The ideal use for a Beast? - park "him" next to 2 Gutter Runners.
A mindset that I have found helpful to my own play is to understand that the Nurgle team is more effective in the opponent's turn than during its own turn. This is a different perspective from pretty much all other teams. The Beast is the best example of this, being, in "his" own turn, just a glorified Troll.
A Beast with Break Tackle is like gold dust in a tournament.
