Last time before I took Tackle some of you said go for Mighty Blow, but after playing amazons and when I didn't powed the ladies I got furious and I took Tackle.
So what for last normal skill?
1. Mighty Blow (fast, agile hardhitter)
2. Sure Hands (use him as a runner)
3. Frenzy (can be good/can be bad)
Doubleskill?
1. Dodge (hate it when only some have it in a team)
2. Leap (the galloping bull)
3. Jump-Up (to never loose speed and always ready for a block)
Give it to me!

Sure Hands or Stand Firm. Sure Hands lets him play ball-carrier, while Stand Firm makes him an optimal cage-front: faster than the ball-carrier, hard to cope with as a fixed assist, and capable of scoring if not double-marked.
Doubles? Dodge. Don't worry about Tackle: most Tackle guys are ST3 and they frequently have other stuff, meaning they won't likely target your Dodger for early blitzes, and if they mark you your ST4 BC can beat on an expensive guy.

I'm trying to build a brutal chaos dwarf team (without mutations, becuse of that the minis don't have any). All my chaos dwarf blockers have mighty blow so I will go Piling On on all 6 players (and they also have guard).
All my hobgoblins will have dirty player
And I wanted to go bullcentaur with tackle and mighty blow
hard, evil, nasty - Yes!!! I know I will be hated for it, but we play more than one team each, so I will have nicer teams also.
Have anyone tried out all Piling On/Mighty Blow + Dirty Players???

Bubby is already as good as he needs to be as a star player. As a star team player, he needs skills that'll help other players on your team. I'd say Stand Firm, to ensure others have the room to move that they need, and Nerves of Steel, so he can help move the ball around.
That said, I'd take Dodge before NoS for all the reasons Matt said, plus he must have some serious nostalgia value by now. You'd hate to lose him to a 2+ dodge..

Today I have to share my happy moments with all of you
My bullcentaur did a great game and earned 7 spps and reached Super Star status in todays game and I rolled double 6s on the skill roll!!!!

On a regular roll, Stand Firm, Strip Ball, and Mighty Blow would be great choices. Only you know how you use him. I wouldn't make him a better ball handler... he is already awesome!

Next game I will probably just le him be the bodyguard, protecting the ballcarriers.
If the ballcarriers is going down, then I can use him to take back the ball. And if I don't use him as ballcarriers, then I don't get so much attention, and then I can be "sneaky" with him.
He is a monster! But we have more cool stars in our league:

That AG6 Gutter Runner looks amazing. Even though I'm not sure those are really the best skills to give him, maybe he's not used in the regular fashion. Sort of like a ball snatcher, dives into multiple tackle zones, hikes the ball and lobs it out to another Gutter Runner who then scores (before the opposing team have a chance to kick the fur off of him).
But I digress, that's a damn fine Bull Centaur you have.

Well the gutter runner is also mine

Sewer "Magic" Jack
9 2 6 7 Dodge, Accurate, Block, Safe Throw, Leap 260,000
And I use him as a ballsnatcher.
He got the skillups in this order:
+AG
Accurate (rolled double a made him a thrower, hade none throwers then)
Block (to protect him)
Safe Throw (maybe on this double I should have taken Pass, but AG5 and safe throw is great, although I have used its maybe 3 times in 54 matches)
Leap (AG5 and Leap is more than great)
+AG (rolled 11 again and was first doubtfull, was thinking Sure Hands, but it's to cool to not have AG6)
