I have played the WE before using the same lineup as you have chosen but right now I am in the finals in my league using the Undead. Thus I have experience from both sides of the ball.
My own choice with Undead is different from your friends. I have 2 mummies, 4 ghouls, 2 skeletons, and zombies on the line. I recently got my first wight.
I have found it best to keep my slower zombie and mummies in the center of the field and keep my faster ghouls and skeletons on the wide zones where they are better at reacting to drives and tying up players. The undead thrive at trying to slow other teams down with tackle zones and putting players in the way. Don't get me wrong, there is nothing I enjoy more than using a Blitz action with a mummy to pound someplayer into the dirt. The usual defense I use is to force my opponent to make as many rolls as possible and hope that he blows one and gives me a chance for a turnover. Then it is the Move 7 ghouls that swarm in and do the scoop and run.
I would keep my eye on your opponents wight with the strip ball skill. Expect him to be the player that he plans to use a Blitz action with to get to your ball carrier. If your opponent is smart then he will place this wight in the third line with the ghoul in the center of the formation preferably on the side with the skeletons. This way if you get penetration then he is perfect position for a blitz and stip ball. Forewarned is forearmed.
When playing the WE, I found that the greatest skill the WD had was his leap skill. With this player you can get penetration at two different places on the Undead line. The first is right up the middle. Start the WD 1 square off the scrimage line behind one of your line elves incase the opponet gets a Blitz on the Kick-off table. It is hopefully 1 move to the square with the wight in the center of the line. A leap roll to jump over the wight ( no mods on the roll which is 3+ ) and then a 2+ dodge roll to move on down field. Combine this little play with a line elf retrieving the ball and handing the ball to the WD and you are on the way down field for a score. The great thing on this play is that you are avoiding rolling dice against a player with block skill.
The second option is to move a player up to the skeleton in the wide zone. Use a second line elf with a blitz action to move up on the outside and thow a block at the angle. This is the good old bump and run. The wardancer can then move through the opening created by either the push or the knockdown toward the second skeleton. A well timed leap should again put you in the clear on the other side of the skeleton. All the other of your line elves should move in for a round of putting tackle zones on anyplayer that might interferre before the score on the next down.
Remember with the WE you have time on your side due to your speed. The two ways you can move a player through the lines is good if you only have a couple of downs to score a game winner. The undead are usually going to need two to three downs with no interferrence to do the same. My team is fast with one ghoul with a MV8 and I still work hard to score on two downs and most times it is more like four. If I score in less than that time it is due to a turnover in my opponents endzone usually due to a failed pickup of the ball ( in one game against a dwarf team I used this team to score 3 times in one half and finished the game 5-0 due to using the ghouls to get kick penetration on the ball carrier ).
Here is one last tricky play that works for quick teams that I learned in my last game ( it was a semi-final ), it was first attempted against me but I turned around and used it to get the overtime game winner. If you have a player that has the ball ( like the wardancer in the previous pieces of advice ) and you find that he is over extended and likely to be the focus of some serious retributive smack down. Use that player with the ball for a pass action to an empty square down field. Preferablly, three squares from the sides of end or backend of the pitch. The other team is slow and has no natural throwers or people with sure hands. Add to that the Undead team has many slow ( especially compared to the WE ) players. They will spend mos of their move rushing for the ball or dodging your players to get back for the scramble at the end of the field. A scramble in their end zone is far better than someplayer blitzing your ball carrier. In the confussion you will have a hoarde of players down field and soon be back in control while his mummies are left at the scrimage line looking lost.
