Doubles on a LRB4 Human Catch FUMBBL
so I play against everything.
Catcher has Dodge, Catch, NOS already
Team has
4 linemen - no skills
3 blitzers - 2 w/ guard
1 catcher- catcher,dodge, +MA, Block
1 thrower - pass, SH, block
have 110K in the bank not sure if I want to replace the blitzer (had no SPP) that just died or get the ogre
so for the catcher I cant decide if I should get dauntless or another man with guard.

Fummbl is LRB 4, isn't it? Then Dauntless is a very good choice, although NOS wont be used a lot anymore, I think. In combination with NOS you could try Dump-off. Jump Up and Guard are good choices as well.
Teamwise, take the Blitzer. You need them more than the Ogre.

I was thinking throw to the catcher with NOS then get him one of my guard assists from my blitzer and let the catcher do the blitzing with dauntless. The down side to this is another die roll for the dauntless roll and the catcher doesn't have block yet.
But I'm also scared to give him Guard before he has block also, But he would be a VERY mobile assist.
I think I will stay away from Leap seeing as how its only 50/50 chance with AG3

I would not give hime Pass or Accurate. Human Catchers have no problems with gaining spp's anyway. You are right on the Dauntless. You need Block first, I deem.
I don't think you will ever regret taking Guard, apart from him geting killed after just giving an assist

Pro can be helpfull. But I would still be to pick a Double skill choice for the sake of the double roll. You will never regret taking Block as well.
I use my Catchers as mobile Blitzers (giving Guard to my Blitzers) to harass the Bal carriers. Block first, then Dauntless (lrb 5) or Strip Ball (lrb 4). Dump off is really anoying as well.

leap is stupid with ag3 and still doesnt use the double. Dauntless is useless without block. Guard can be nice, i loved my wood elf guard catcher on fumbbl, but he died. But as already mentioned nos will be much less used if you take guard. I think dump off can be a real pain combined with nos. Had the "pleasure" experiencing that combo yesterday on an elf catcher. So i would pick either dump off or guard depending on your playstyle.
