I agree with everything Matt and Cramy said, so I'm not going to reiterate all that. I'll just add a couple of thoughts.
Never pass up a stat increase. +MA can't be replaced with anything else even on a lino. A lino with +MA is now a blitzer. A catcher with +MA is a TD machine. +AG, well, a 5 AG elf with leap and dodge is a gift directly from the gods of battle. +ST, a 4 ST elf with block and frenzy will open holes for your catchers all by himself. On defense he'll scare the crap out of your opponant. A 7 4 4 8 Block, Frenzy player is a game maker. You'll love him.
Elves, all elves, are always on offense. I don't care who kicked off, doesn't matter who has the ball. Elves are on offense. They've always got to be thinking about how they can steal the ball and score within 2 turns. It isn't a fight, try not to get into scrums, just steal the ball, hand it off, chuck it a few squares, run like a bat out of hell. Score.
That being said, when on defense, get as many of your elves into his backfield as he has players there. The slower the team you are playing, the more of your elves you get into his backfield. Force the game to be played in his side of the field. Leap really helps to accomplish this. If you get a 5 AG player, next skill is leap. Get Kick. Put the ball in a far corner of the field and race him to the ball. Remember, even though you kicked off, you're still on offense. Go get the ball.
Pick skills that'll help you get at the ball carrier and take the ball. Strip ball is a skill that at least 2 elves on every team should have. Doubles = Guard on at least 2 other elves. Don't put Guard and Strip Ball on the same elf. Juggernaut is another good one. Juggernaut + strip ball = touch downs.
Get a passer. I know a lot of coaches said a thrower is a waste. Don't you believe it. You'll be doing a lot of ball handling. Lots of ball handling means lots of die rolls. Get as many skills with built in rerolls as you can. Pass, dodge, catch, Sure Hands, all that. That way you can save your Team ReRolls for blocks and such. And a passer with pass, accurate, safe throw, and then either Strong Arm or Nerves of Steal, is a touchdown maker. He'll win games for you.
Now steal that ball and score, score, score.
