I tend to play symmetrical defenses - sometimes a zig and various modifications.

One thing I have been considering is the value of an offset defense - one where the 3 LOS players placed against the side of the middle zone instead of in the middle.

This is a good defense for agile teams, especially if they have kick as you can force the opposition to choose to set up to hit the LOS with more players or to better cover the weak side defense as well.

But what about for bash on bash matches?

If the LOS crew are your weakest three it probably isn't much of a loss if they are out of direction of the advance of the offense, and it may leave your opponents out of position if you get a blitz or they blow the ball pick up.

On the other hand if they just drive over your LOS crew it might leave your players out of position.

What do you think?

I do that on interior defenses vs bash, with or without a bash team of my own. I find the offset line tends to force teams to game-plan anew.

I do offset defenses often with bash or agile teams. I find switching up my defensive orientation really messes with some opponents' plans. And I usually don't have kick. It often forces them to overload one side of the field and then you can close in and force them to one side.
