I certainly agree that a 'true' UK Champion should be able to master & demonstrate winning ways with a variety of races (not just the ones that are pish easy to score with or just really hard to beat up)...
to keep things light hearted, how about adding a 'Compulsory Team' (selected at Random from the challenging races list) to the mix...?
but to up entertainment/challenge level make it a tad more interesting Chaos: Only Beastmen Team; add a Std Stunty Lizardmen Team, Vampire Team with only 2 Vamps; Nurgle w Rotters & Pestigors etc....
don't expect this idea to be taken seriously, but it would certainly challenge & test all potential UKC's, especially if played at a top tournament...
who knows, it might give the mortals the opportunity to get a scalp!?
NB: Not Halflings unless LRB6 rules are toned down...
